I have the same problem on all 4 of my mac's. I got it working by removing HP installation all together then running the disc utility to repair permissions. Found a ton of errors that it corrected. Then re installed the latest version of HP's all in one then re run disc utility and it worked.
Not as good as before but all functionality is there. Disc utility is now very slow and comes up with this Warning: SUID file 'System/Library/CoreServices/RemoteManagement/ARDAgent.app/Contents/MacOS/ARDAg ent' has been modified and will not be repaired. But t does not seem to effect anything. Hope this helps. I have the same problem and the same issue; I can print (I do have a double-sided printing unit attached to the C6180, and there's a bug in the HP drivers that cause the second page to be printed upside down), but scanning and faxing is out.
I tried to solve it as follows: In System Preferences, I removed the printer queue for the C6180; then, I went to /library/printers and deleted the entire HP folder. Then I deleted all files pertaining to HP in /library/receipts. I reinstalled the software from the CD that came with the C6180; at some point, the installer told me to open the print center. Leopard doesn't have one, so I set up the printer using the Fax & Print section in System Preferences (my printer is connected via WiFi, and it shows up as a device under Bonjour). I was then able to configure the printer with the application that the HP installer puts into the dock. This allowed me to print and scan, but not to fax. The only way to fax right now is to print out the fax and then send it by using the C6180 as a standalone unit.
Scanning turned out to be a bit erratic and unstable; because I have an HP 5470 ScanJet scanner that works perfectly (after I manually re-installed its software; the scanner was no longer functional following the installation of Leopard), I decided to revert; I de-installed the HP 6180 software, then followed the steps outlined above to remove the HP items in /library/printers and /library/receipts. Finally, I re-installed the HP drivers from the Leopard installation DVD and added the printer through System Preferences - Fax & Print.

HP is working on new drivers; in fact, beta drivers for the 5180, 4180, as well as a few other Photosmarts have already been posted by HP, so I expect a solution for the 6180 very soon. In the meantime, if you absolutely must scan, the above should work for you.

I have to consider downgrading back to OS X Tiger! I can't go long without full functionality in the HP Photosmart 6180! Check the post above yours; beta drivers are supposed to be posted on HP's web site within the next 24 hours. Other fixes are available that allow copying and scanning, in short just about full functionality except faxing from the Mac.
If anything about your system is that critical for you, you should never upgrade your machine right away; it's wise to wait a little while and see if anyone is having problems with the stuff you need most. Reading these posts - it sounds like some folks have gotten the HP Photosmart C6180 to print - but not scan. Since upgrading to Leopard, I get nothing at all - no printing even thought the printer appears ready in the printer list. I shudder when I think of all the time I have been wasting trying to figure this out. I have been on the phone with HP tech support twice now. The second time they said it was related to the /cups/ reference in the string that shows up that ends with 'failed' - Do I read Andrew's message to mean that HP will be providing the fix that will make my almost brand new printer work again?

Until now I had been waiting and watching the hp site. I happened to post in the other thread and he answered back there. I had previously been able to print, but not scan or fax. I have installed the beta software on my Mac Pro, but not yet on the MBP. I am able to scan and print fine now, haven't tested fax yet. Will report back once I have installed on the MBP and tested fax.
